2-3 slices bread
2 T skim milk
½ c ketchup, divided
2/3 lb ground beef, extra lean
½ lb lean ground veal
6 oz lean ground pork
½ c chopped onion
1/3 c chopped fresh cilantro
1 T Dijon mustard
1 tsp dried basil
¾ tsp salt
¼ tsp black pepper
2 large egg whites, lightly beaten

Directions:
Directions:
Preheat oven to 350°. Place bread in food processor; pulse a few times until coarse breadcrumbs measure 1½ cups. Combine bread crumbs and milk in a large bowl; let stand 5 minutes. Add 2 TB ketchup, beef, and next 9 ingredients. Shape mixture into a 9 x 5 inch loaf on a broiler pan coated with cooking spray. Spread remaining ketchup over top/sides of meatloaf. Bake at 350° for 1 hour or until thermometer registers 160°. (Note: it takes ours 1 hour and 10 minutes to bake) Let stand 10-15 minutes then cut.
