1 c. finely grated carrot
1 c. finely chopped onion
1/2 c. finely chopped celery
1 (16 oz.) pkg. chopped broccoli
4 tbsp. butter
1/2 c. all purpose flour
2 c. chicken broth
1/2 tsp. salt
4 c. half & half
2 lb. Velveeta, sliced

1. In covered saucepan, melt butter and cook vegetables over low heat until tender.
2. Stir in flour, making sure there are no clumps. Add broth & salt. Cook & stir until thickened & bubbly.
3. Stir in half & half and Velveeta until melted & soup is heated through. DO NOT BOIL.

I use Velveeta Light or 2% vs. full blown Velveeta. Also, I haven't tried using the fat free half & half with this soup, but that works well with the other recipes I've used it with.
