2 to 3 boneless chicken 1/2 breasts
2 Tbsp. seasoning blend of salt, paprika, pepper, garlic, and onion powder, or a pre-mix from the grocery store
4 Tbsp. mayonnaise
Ketchup (optional)
Skewers (soaked for 1 hour if made of wood)

Cut up the chicken breasts into uniform kebab-sized cubes so that they will cook evenly. Remove all sinewy parts.

Place the cut up chicken in a shallow glass container, preferably one with a lid. Add the seasoning mix to the chicken one tablespoon at a time. Coat the chicken with the spice rub. Make sure that all the surfaces are coated. Add the mayonnaise to the chicken, coating all the sufaces evenly.

Cover the container and place in the refrigerator for at least 2 hours to allow the flavors to blend. After the chicken is marinated, remove from the refrigerator and place 6 to 8 pieces on each skewer.

Heat BBQ or outdoor grill to 400º. Place on the grill. The high temperature seals the outside of the chicken while keeping it moist on the inside. Grill for 5 minutes, turn the skewers over and lower the temperature to 350º. Continue cooking the chicken skewers for another 10 minutes or until the chicken is done.
