4 halibut fillets (about 1 1/2 lbs.)
2 to 3 Tbsp. melted butter
Salt and pepper
3 Tbsp. butter
4 to 6 oz. mushrooms, sliced
4 to 6 green onions, trimmed, thinly sliced
3 Tbsp. flour
1/2 cup chicken broth
1 cup milk
1 Tbsp. sherry
1/2 tsp. seasoned salt or Cajun seasoning
1/4 tsp. garlic seasoned pepper or other pepper blend

1. Preheat oven to 350°.
2. Season fish with salt and pepper, to taste.
3. Heat an oven-proof, non-stick skillet on medium-high heat, add 1/2 tablespoon of butter and 1 tablespoon of olive oil.
4. When butter foams, add fish and pan-sear for 3 minutes on one side (until crisp, brown layer forms). If butter begins to brown, reduce heat.
5. Flip the fish and place the skillet in the oven to bake for 8-10 minutes, basting occasionally with the butter, or until fish begins to flake with a fork.
6. Remove from oven and let stand for 5 minutes. WARNING: HANDLE IS HOT!
7. Meanwhile (or before), make mushroom sauce: In a saucepan, heat butter over medium-low heat; add mushrooms. Cook, stirring frequently, until mushrooms are golden brown and tender.
8. Add green onions. Add flour, stirring until well-blended.
9. Gradually stir in chicken broth and milk until smooth.
10. Add sherry and seasonings.
11. Continue cooking, stirring constantly, until sauce is thickened and bubbly.
12. Serve halibut with sauce.
