Prepare marinade:
1 quart water
1 c vinegar
2 large onions, chopped
1/2 c chopped celery
2 tsp worcestershire sauce
1 clove garlic
1 tsp dried thyme
1 tsp whole black pepper
1 T salt
2 T chopped parsley

Mix all ingredients, bring to boil, then reduce heat and simmer 1 hour.
Cool.

Cover a large roast with marinade and refrigerate for 24 to 36 hours.
Drain and place on rack in shallow baking pan.
Add salad oil to cover bottom of pan.
Bake 375º 25 to 30 minutes for medium-well done roast.
May be brushed with oil.
