3 T. unsalted butter
1 medium onion, chopped
2 XL eggs
3 cups creamed corn
1/2 c. flour
2 c. corn muffin mix
1 1/2 cups sour cream
2 1/2 cups grated cheddar cheese

Directions:
Directions:
Preheat oven to 400º Melt butter in a skillet and saute the onion until translucent. In a mixing bowl combine the eggs, corn, flour, and muffin mix. Mix well. Add the sautéed onion and mix again. Pour the batter into a well-greased 9X13 baking dish. Tap to make sure the batter is level, then spread the sour cream on top. Sprinkle the grated cheddar on top of the sour cream. Bake for 25 min in the preheated oven. Reduce the temperature to 350º and bake for an additional 25 min or until the casserole feels firm in the center.
