3 bunches spinach(12 - 14 oz/375 - 400 g each)
1 cup sweet trahina, acini di pepe or orzo
1.4 cup olive oil
1 onion, chopped
1 leek chopped (white and light green parts only)
1.4 tsp salt and pepper
4 eggs
6 oz feta cheese, crumbled
1 1/4 cups shredded Swiss
1/4 cup Parmesan or Romano cheese
1/3 cup chopped fresh dill (optional) but good

Directions:
Directions:
Blanch and drain spinach, lightly squeezing out excess moisture. Chop finely. Set aside. Boil orzo or whatever you are using until al dente. Drain, rinse under cold water and drain again. Heat oil, fry onion and leek, salt and pepper until soft, about 8 minutes. Scrape into a large bowl. Beat eggs and milk, add spinach, trahina, cheeses to onion mixture and dill if using. Scrape into an oiled 12 cup casserole. Bake in 375º oven until set and golden on top. About 40 - 50 minutes. If set and not golden, broil for 2 - 3 minutes.

This takes a bit of time to make but is really good. Even grampa likes it. I have no clue what trahina is. I am told it is a tiny Greek sun-dried pasta.
