2 C. Milk
3/4 C. Sugar
1/2 tsp. Salt
1 tsp Vanilla
2 rounded Tbsp. Cornstarch
3 Egg Yolks
1 C. Shredded Coconut, divided

Directions:
Directions:
Heat milk, sugar and vanilla over medium heat until dissolved and warm. Mix cornstarch with enough water to make a liquid. Add to cornstarch 3 beaten egg yolks, blend. Pour a little of the warm milk mixture into cornstarch/egg mixture to temper. Stir and add back into remaining milk mixture. Cook until thick then add 3/4 c. Coconut, stir. Let cook on very low heat covered until merange is whipped and ready. Makes 1 9" pie.

This is the best part of our childhood! Grandma Romine would make us her famous Coconut Cream Pie every time we were together. She was so famous for this pie that the preacher even mentioned it at her funeral.
