4 C all-purpose flour (can be whole wheat)
2 Tbsp. homemade baking powder
1-1/2 tsp salt
8 Tabs. chilled shortening, cut into small pieces
1-1/2 C buttermilk
2 Tabs unsalted butter, melted

Homemade Baking Powder
1/4 C cream of tartar
2 Tabs baking soda
1 Tabs cornstarch

Preheat oven to 500º. Grease a baking sheet or line with parchment paper.
In a bowl, sift the flour, baking powder and salt, then add the shortening and blend the mixture until it resembles coarse meal. Stir in the buttermilk and form into a ball. On a lightly floured surface, gently knead until a dough is formed. Pat or roll out dough onto a lightly floured surface into a round 1/2- inch thick and with the tines of a fork, prick the dough at 1/2-inch intervals. With a 2-1/2 to 3-inch round cookie cutter, stamp out rounds and arrange them one inch apart on the prepared baking sheet.
Bake the biscuits for 8 minutes, brush the tops with melted butter and continue to bake for 2 to 3 minutes more or until golden brown.
