Ingredients:
1 Cup Brown Sugar
1 Stick Butter
1 Can Pineapple Rings (save juice)
Marishino Cherries
1 Yellow Cake Mix

Directions:
Directions:
This was a favorite while camping made in dad's cast iron Dutch oven with a lid. Use a large cast iron skillet when making in the oven at home. When camping, place the Dutch oven on a bed of hot charcoal and place some on the lid as well. Place fewer coals underneath to keep from burning cake.

Melt the butter and brown sugar in hot skillet or Dutch oven. Place pineapple rings and add cherries in centers and on side of pineapple.

Prepare cake mix as directed but subsitute an equal amount of pineapple juice you saved for the water to give the cake a pineapple flavor. (You can also use a pineapple cake mix instead.) Use the richer cake mix- pudding in the mix for a more dense, rich cake.
This brings back wonderful memories of the fun we had growing up camping at Beaver lake and Eufaula! Those were the best times we shared as a family. Especially the trip we forgot the campstove so everything was cooked over a campfire. What a great time we kids had keeping the campfire going all weekend.
