Bake at 325 for 30 to 35 minutes

Mix next ingredients together in a large bowl:

4 cups diced apples
1 cup or less white sugar
1 1/2 cups raisins
1 1/2 cups chopped nuts

Mix liquids together in one bowl:

2 eggs
1/2 cup vegetable oil
2 tsp vanilla

Mix dry ingredients together in one bowl:

1 1/2 tsp. soda
2 tsp. cinnamon
3/4 tsp. salt
2 cups flour

Stir egg mixture into apple mixture. Add flour mixture. Don't over mix. Fill muffin tins to the top.
