2 cups raisins
just under 1 tspn baking soda
2 cups diced apples
1 jar Mincemead Pie Filling

Directions:
Directions:
Add just enough water to cover raisins in saucepan.
Heat and let boil a few minutes.
Add baking soda, stir, let set a few minutes, or while you are dicing the apples.
Stir together raisins, apples and mincemeat.
Pour into pie crust, add top crust, wipe with egg white mixture, sprinkle with a bit of sugar and make slits for steam release.
Bake according to directions on jar.

Dicing the apples takes the longest, the rest 20 minutes.

This was mom's version of mincement pie, which I so much prefer. It basically cuts the jarred mincemeat, which has lots of flavour, but is just too strong. The added raisins and apples make it so good. We usually serve this warm with vanilla ice cream, because it's still a pretty rich pie. This is one of Jenni's absolute favourite pies, which she's only allowed to have at Thanksgiving. Enjoy
