1(6-8 oz.) salmon fillet, boneless and skinless

-salt and pepper

-all purpose flour

-1 tsp. dijon mustard

-2 tbsp. pignoli(pine nuts) chopped

-olive oil

-2 tbsp. minced shallots

- 4 fresh basil leaves

-1/2 fresh tomato, sliced

-1 scallion thinly sliced

-1/4 cup dry white wine

-1 tsp. lemon juice

-1 cup chicken broth

-1 tbsp. unsalted butter, dusted with flour

Season the salmon filet with salt and pepper on both sides, dredge the salmon in flour and shake off excess flour. Rub the flesh side with small amount of mustard to coat. Spread the pine nuts on top of the mustard and press to make a layer of crust.

Heat a 10-inch sauté pan over medium flame, add olive oil to coat the pan, cook the salmon crusted side down for a few seconds until pine nuts become golden brown, cook other side for another minute.

Remove the pan from heat and place the salmon on a work surface. Wipe out pan, return the pan over the heat, add small amount of oil, add shallots and cook for a minute. Add basil, white wine, chicken broth, tomatoes, scallions, mustard and lemon juice. Carefully place salmon back in the pan and bring the sauce to a boil. Cover pan and cook for about five minutes, salmon is done when firm to the touch.

To serve, place the salmon on warm dinner plate. Meanwhile, add the flour dusted butter to the pan and quickly reduce the sauce to a syrupy consistency. Spoon sauce around salmon and enjoy!
