1 T. olive oil
3 cloves garlic, minced
1/4 tsp. pepper
20 oz. pkg. frozen corn
1 med. onion, diced
3 stalks celery, chopped
1 can chicken broth
1 can creamed corn
1 c. milk or half and half
1 to 2 c. frozen, diced hashbrowns, or diced potatoes

Directions:
In stockpot, saute garlic and onion in olive oil. Cook 1 minute. Add corn, potatoes and broth. Bring to a boil. Reduce heat. Cover and simmer 5 minutes or until potatoes are tender. Add milk and creamed corn. Heat through. Do not boil! Serves 6.
