75 lbs beef or half beef and half deer
25 lbs pork
6 oz black pepper
6 oz black peppercornsor use 12 oz of black pepper
2 1/2 pds of salt( pickling salt)


Directions:
Directions:
Grind or cut meat into small pieces, spread on table let set overnite, this lets blood drain off. in the morning mix all the seasonings and grind over. Stuff into casing and smoke for about 5 DAYS.Do not under smoke.

Note: All meat should be fresh not frozen.
