4 lbs of carrots( WEIGHT MINUS GREENS)
4 oranges cut into 1/4 inch slice
4 lemons cut into 1/4 inch slices
2 c muscot raisins chopped
8 c sugar'
12 peppercorns
1 oz of wet yeast
1 slice of whole wheat toast

Directions:
Directions:
Scrub carrots well ,do not peel, shred fine. Put carrots in water, bring to boil for 45 minutes. Set aside to cool to lukewarm.
Strain through jelly bag squeezing well to get out all liquid.
Return to kettle , stir in sugar making sure all is dissolved, add fruit, moistened yeast with a few drops of water and spread on one side of toast. Add peppercorns ,float toast yeast side down on liquid, let ferment 2 weeks in warm place. Stir everyday, Then strain in jellybag squeezing very dry. Return to kettle for 2 days. siphon into clean sterilzed jars, cork lightly . when fermentation has stopped seal tightly. Kepp at least six months.
