5-6 chicken breasts
1 c. soy sauce
1 c. water
2 heads lettuce
2-3 bunches of green onions
1 pkg. wanton noodles or fry 1/2 pkg of wanton skins
2 c. slivered almonds
DRESSING:
3/4 c. tbsp. sugar, 1/2 c. rice vinegar, juice of 2 lemons, 1/2c. oil, 2 tsp. salt, 1/2 tsp. pepper

Gently simmer chicken in water and soy sauce 20-25 minutes until done. Cool and chop chicken into bite size pieces. Shred lettuce. Slice green onions. Divide into 2 large bowls. Add 1 c. of almonds per bowl. Toss. Dressing: combine all dressing ingredients, refrigerate. Add wantons and chilled dressing. Add dressing just before serving.
