2 tbsp. salted butter
1 9oz. box of frozen spinach
1/2 tsp salt
1/4 tsp. pepper
1 can of Pillsbury Grands Original Biscuits
4 oz. thick cut canadian bacon (cut into 1/4 in. cubes)
8 eggs
2 cups shredded mild cheddar cheese

Heat oven to 350 degrees. Spray 8 jumbo muffin cups with Pam. In a 10 inch skillet melt butter over medium heat. Stir in spinach salt and pepper cook 5 to 7 minutes and remove from heat and set aside. Separate dough into 8 biscuits and place 1 biscuit in each muffin cup pressing dough 3/4 of the way up the sides of the cups. Place 1 tbsp. of bacon on bottom of each cup and top with spinach mixture ( or can substitute creamed spinach). Using finger make 1 1/2 in. wide indentation in center of each cup and break one egg into each cup. Top each egg with 1/4 cup of cheese (cups will be full). Bake 20 to 25 minutes or until center feels firm and biscuits are golden brown. Cool 5 minutes serve while warm.
