2 c. flour
2 eggs
1 T. sugar
1 1/2 c. milk
1 t. baking powder
Vegetable oil
1/4 t. salt

Directions:
In a deep bowl, stir together flour, sugar, baking powder and salt. Mix eggs and milk together and pour into dry ingredients. Stir with whisk until smooth. Pour shortening in skillet to ½ to 2” depth. Heat until hot, but not smoking. Hold funnel with a ½ “ opening and keep one finger over spout. Pour about a ½ cup batter into funnel – from a small cup or pitcher. Hold funnel over hot oil, remove finger – and using a slow swirling motion, dribble batter in the shape of a coil starting in the center of the pan. Try not to let the cakes touch each other or edge of pan. If batter becomes too thick, add milk a tbsp. at a time. Deep fry cakes for 2 to 3 minutes on each side – turning once. Remove carefully and drain on paper towels. They can be sprinkled with powdered sugar or served with maple syrup. They can be kept warm on a paper towel lined baking sheet in a low oven.
