1/2 lb. Chinese vermicelli
3/4 cup vegetable oil
4 chicken breasts, boiled
1-1/2 cup green onion, thinly sliced
2 cloves garlic, minced
4 cups cabbage, shredded
1/2 cup soy sauce
1/2 teaspoon black pepper
2 eggs, beaten

Directions:
Directions:
Following directions on noodle package, boil until tender, drain. Heat 2 tablespoons. oil in skillet and saute chicken 3 minutes. Remove and add 2 more tablespoons of oil, saute onions and garlic. Remove and add 2 more tablespoons oil, saute cabbage for 3 minutes. Return all sautéed ingredients to pan and add soy sauce and pepper. Cook 2 minutes. In a separate non-stick skillet heat 2 tablespoons oil until warm; cook beaten eggs until set; cut up and set aside. Heap noodles onto platter and put chicken and cabbage mixture on top. Top with cooked egg and serve.
