2 1/2 cups flour
3/4 cup sugar
3/4 cup brown sugar
3/4 cup cooking oil
1/2 tsp. salt
1 egg
1 cup buttermilk
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla

Substitution for buttermilk: add 1 tablespoon of lemon juice or vinegar and a heaping teaspoon of sugar to 1 cup of milk. Let stand 5 minutes.

Mix flour, sugar, brown sugar, oil, and salt. Set 1 cup of mixture aside for topping. To the remaining mixture, add egg, buttermilk mixed with soda, cinnamon, and vanilla. Pour into a 13x9-inch pan, then top with mixture that was set aside. Bake at 350º for 30 minutes.

You can also top this cake with chopped pecans (but Darbe won't let me), just sprinkle on top before you bake. This recipe is from a dear friend of the Gosda family, Lorraine Clouse. I think Darbe would rather have this coffee cake instead of a birthday cake on his birthday!
