1/4 cup vegetable oil
1 tbs. soy sauce
3 tbs. honey
2 tbs. white vinegar
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1 1/2 lb. chicken breasts, cut into 1 inch cubes
1/2 lb. fresh button mushrooms
2 medium onions, cut into wedges
1 sweet red pepper, cut into 1-inch chunks
1 sweet yellow pepper, cut into 1-inch chunks
1 medium zucchini, cut into 1/2 inch slices
Hot cooked rice

1) In a large sealable bag, combine first 6 ingredients; add chicken and seal bag. Turn over several times to coat evenly. Refrigerate for 8 hours or overnight.
2) Drain and discard marinade. On 12 metal or soaked wooden skewers alternately thread next 6 ingredients.
3) Spray grill rack with non-stick spray, then grill, uncovered, over medium heat for about 15-20 minutes, turning occasionally, until meat is cooked. Serve over rice. 6 servings.
