2 cans petite diced tomatoes, rinsed
2 cans black beans, rinsed
2 cans shoepeg corn, rinsed
red onion to taste, diced
1 tbsp. cumin
2 tbsp. lime juice
1/2 c. fresh cilantro, chopped
2 tbsp. olive oil

Directions:
Directions:
1. Combine beans, tomatoes and corn in a colander and rinse. Transfer to a bowl.
2. Add remaining ingredients and stir. Add additional cumin as needed.
3. Refrigerate at least an hour before serving to bring out flavors. Serve with tortilla chips.
