2 pounds ground beef
1 cup chopped onions

Directions:
Directions:
Put ground beef and onion in skillet. Fry until done and drain off excess grease. Add 1 teaspoon salt, enchilada sauce and 1/2 cup grated mild cheddar cheese. Just enough enchilada sauce to make it moist. Let simmer 5 minutes. (I use the dry enchilada sauce mix and mix according to package directions.) Put about 3 tablespoons meat in each enchilada. Roll up and place in 9 x 12 pan. Put remaining sauce on top and sprinkle with shredded cheese. Bake 350º until cheese is melted. NOTE-- you could also add 1/4 teaspoon garlic powder if desired.
