Banana Nut Bread Recipe

3 3/4 c. sweet quick mix*
2 eggs, beaten
1 T. lemon juice
2 med. bananas (mashed, about 1 c.)
1/2 c. chopped nuts

Directions:
Directions:
Preheat 325º. Grease 1 5x9 or 2 5x7 loaf pans.

Combine all ingredients. Stir to blend. Turn into prepared pans.
Bake 50-60 minutes at 325º. Cool on rack 5 minutes. Turn out of pan(s). Cool right side up on rack.

Makes 1-2 loafs.

6 c. all-purpose flour
1 T. baking powder
1 T. baking soda
1 1/2 tsp salt
1 1/2 c. sugar
1 1/2 c. packed brown sugar
1 1/2 c. vegetable shortening.

In a large bowl, stir flour, b. powder, b soda, salt & sugars with wire whisk until blended. Use fingers to blend in shortening until evenly distributed. Spoon into a 12 c. container with a tight fitting lid. Seal container. Label with date & contents. Store in cool, dry place. Use within 10-12 weeks. Makes 11 cups.
