2 1/4 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 eggs, beaten
2 c. buttermilk
1/2 tsp. vanilla (optional)
8 Tbsp. butter, melted
Directions:
Directions:
Whisk together flour, baking powder, salt and baking soda. Add eggs, buttermilk, vanilla and butter. Stir together well.

If batter seems too thick, add a tablespoon or two of buttermilk; if batter seems too thin, add a tablespoon or two of extra flour. Stir to mix.

Pour batter into a preheated waffle iron and cook until perfection.

Uncle Will makes the best homemade waffles. Uncle Will was my Mom's elementary school principal and the owner of a camp in Maine where my Dad went to camp when he was a boy. We see Uncle Will often and we love him very much. I love to go to his house and eat waffles!
