Salmon with Sambuca Citrus Sauce Recipe

Ingredients: * 3 tablespoons butter * 2 tablespoons flour * ¾ cup broth * 4 tablespoons olive oil * Salt and freshly ground black pepper * 4 salmon fillets (skin off) * ¾ cup Sambuca * Juice of 2 oranges * Juice of half a lemon * Teaspoon butter

Directions:Prepare a roux. Melt the butter and then add the flour, cook for 2 minutes. Thin out with broth. Set aside.
Prepare the salmon. Preheat oven to 400 degrees. Heat oil in pan over med-high heat. Season salmon. Sear salmon on both sides, around 2 minutes per side. Transfer to a small sheet pan and finish cooking in the oven, about 6 minutes (depending on thickness).
Prepare the sauce. Deglaze the pan that the salmon was seared in with the Sambuca. Add the citrus juices and reduce by half. Add just enough of the roux to make a nice sauce. Taste the sauce, season with salt and pepper if necessary. Finish with a little butter.
Transfer cooked salmon to a plate and spoon some of the sauce over. |
