Ahi tuna, sashimi grade fish
Organic shoyu (soy sauce), rice vinegar, Mirin (sweet rice vinegar), and sesame seed oil
Goma (roasted sesame seeds, we use white but I don’t think it matters)

Marinade:
Organic shoyu in a zip lock bigger baggie enough to cover fish (ahi tuna) and a splash of rice vinegar, mirin, and sesame seed oil.

Refrigerate and marinate fish in bag for 1 ½ hour, turning every 15 minutes.
Prepare Ahi tuna by covering it with roasted goma (roasted sesame seeds) and press into fish after marinating the fish.
Prepare the pan, heat pan so it is very hot to sear the tuna. Note, flash water. Add sesame seed oil to hot pan.
Sear fish, it takes about ½ to 1 minute on each side (cooked outside, raw inside).
Slice and serve.
