Ingredients: 2 boneless chicken breasts flour olive oil 2-3 tbs. 1/4 cup onion diced 2 garlic cloves diced capers 1 cup chicken broth 1/2 cup white wine salt and pepper lemons

Directions: |
Directions:1) Pound chicken breasts with a meat mallet to 1/8 inch. 2) Coat chicken with flour. 3) Heat skillet over medium high heat and add oil. 4) When oil is hot add the chicken to the pan, browning both sides. 5) Once chicken is browned remove from pan. 6) If needed add a little more oil to saute onions. 7) Add onions and once translucent add garlic (keep garlic moving so it doesn't burn). 8) After a few minutes, add wine and broth. 9) Bring to a simmer and add chicken back to pan, add capers. It won't take long to cook through. Once cooked remove chicken from the pan and put it on a platter leaving sauce in the pan. 10) If you want a thick sauce, add a roux. 11) Add juice from half a lemon and pour over chicken. EAT!!!!!!!!!!!!!!!!!!!!!!!!!!!! |

Notes: My favorite dish is Chicken Piccata because it was made by my Dad. I also like it because it has a great taste. The dish has chicken, capers and lemons. They work so well together. I like the contrast of the saltiness of the capers and the tartness of the lemons. Not only does it have a wonderful taste but it is healthy too. We make it healthier by not adding butter. I like the sauce on the Chicken Piccata so much that I put it on my rice. We put the sauce on the rice because it tastes better. That is why Chicken Piccata is my favorite dish.
