First - choose your fish. Fresh is best, but your favorite frozen white fish will work well also.

2 bottles/cans of beer - Dave highly recommends Leinenkugel's Honey Weiss

2 c. flour + more for dipping
1 c. dry pancake batter

Directions:
Directions:
Mix flour, pancake batter and beer. Note: Consistency should be slightly thicker than water. Add the beer slowly to determine the consistency that you would like.

Dip the fillets in flour first, then in the batter. Deep fry at 350º for approximately two minutes.
