Ingredients: 4 eggs 1 C. flour 1 1/3 C. milk

Directions:In med-lrg bowl slightly beat eggs. Add flour & beat until all flour is moistened. Slowly beat in milk. Let rest 2 minutes. Pour a little vegetable oil on skillet, pour on @ 1/4 C. batter & swirl around to fill pan. Cook on med-high heat & turn over when center is not shiny.@ >1 min. Cook about 15 seconds more. I remember my grandmother & my mother (see G'ma Harriet's Thin pancakes) making these, even though my recipe is a variation. These reheat well in the microwave.. |

Notes: This method prevents any "lumps" in batter. I usually add more oil to my griddle after 2 or 3 are cooked. I like the ones done with the most oil as they can be a little browned on the first side. I like these rolled with sugar or syrup; some of my kids use both! I use a 10" "antique" black iron griddle & they are perfect every time! I am going to try my mother's recipe to see what difference it makes.
