Sweet Potato Pie Recipe

6 sweet potatoes
3 eggs
1 stick of butter
2 cups of sugar
1/2 cup brown sugar
2 tsp. almond or vanilla extract
1 graham cracker or pie crust
Merengue: 4 large egg whites
1/4 teaspoon cream of tartar
Pinch of salt
1/2 cup superfine sugar
3/4 teaspoon vanilla extract

Directions:
Wash sweet potatoes. Boil whole potatoes for about 20 minutes until soft. Cool and peel, then mash them. Add the rest of the ingredients. Whip until nice and creamy. Put into crust. Bake in preheated 350º F. oven for 45 mins. to 1 hour.
For meringue: Using electric mixer, beat egg whites in large bowl until foamy. Add cream of tartar and salt; beat until soft peaks form. Gradually add sugar and beat until stiff and glossy, about 5 minutes. Beat in vanilla. Spoon meringue atop cake, mounding in center and spreading completely to edge of pan. Using rubber spatula or knife, swirl meringue decoratively, creating pointy tips. Bake pie an additional 5-10 minutes or when it turns light brown.

When its the 25th of November the Sweet Potato Pies are in the oven. Every Thanksgiving my family has Sweet Potato Pie for Thanksgiving dessert. We always have one with meringue and one without meringue. I like mine with. When you have whipped cream on your pie your have to put it back in the oven for 5 to 10 minutes or until it's a little brown. On Thanksgiving we have other pies also like apple, peach, chocolate and sometimes we have cheesecake but what I love the most is Sweet Potato Pie.
