Apple & Blackberry Pie Recipe

For the Pie Crust

2 1/2 cups Flour
1/4 tsp Salt
2 sticks Butter
6-8 tbsps Cold Water

For the Filling

6 medium-sized Apples
1-2 cups Blackberries
Juice and Zest of 1 Lemon
1/2 stick Butter- melted
1/2 cup Sugar
2 tbsps Cornstarch

Directions:
Directions:
Thoroughly mix the flour and salt in a large bowl. Then add the butter in 1/2 inch cubes and rub into the flour with fingertips until the dough resembles breadcrumbs. Add the water a little at a time and mix in with a knife. Add water until all of the dough can be formed into a ball with no loose crumbs remaining. Cut into 2 equal halves, wrap in wax paper and place in fridge.

Peel, core and slice apple into slices 1/8-1/4 inch thick. Mix in a bowl with the melted butter until evenly coated. Add the sugar, lemon juice and zest and cornstarch and mix thoroughly.

Pre-heat the oven to 350 degrees.
Grease a 10" pie dish.

Remove one half of dough from fridge, and roll out on a floured surface until slightly larger than pie dish. Line the dish with pastry and trim the edges. Pour the apple mixture into the dish and arrange the blackberries on top of the apples. Roll out the remaining half of the dough and cover the apple and blackberry mixture. Trim the edges. Sprinkle with a little sugar or brush lightly with milk.

Make a small slit in the top of the crust to allow steam to escape, and place the dish on a shallow metal pan. Place in the center of the pre-heated oven and bake at 350 degrees for 1 - 1 1/4 hours until the crust is golden brown, and the apple mixture is bubbling.

Serve immediately, preferably with lots of fresh cream!

Out of all the different recipes and foods in the world there is one dessert that stands out most for me. It is the apple and blackberry pie my dad and I make together every fall. The first time we made it was England. We were in Derbyshire in a little cottage that we rented with my grandparents and there was a huge field right across from our house. At the end of the field were tons of blackberry bushes with thousands of juicy blackberries flowing off the edge.
One day we went out to pick some blackberries (we already had apples). Later that evening, when we got home we decided to make an apple and blackberry pie. When the pie was done my family and I devoured the pie, savoring its sweet yet tangy taste and we've been making apple and blackberry pie ever since.
