1 cup sugar
3/4 cup all-purpose flour
1/2 cup canola oil
3/4 cup coarsely chopped walnuts (optional)
3 medium over-ripe bananas, mashed
2 large eggs
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. salt

Directions:
1) Preheat oven to 350º. Coat a 9x5 inch loaf pan with cooking spray. If using walnuts, spread them in a pan and toast them in the oven for 5-8 minutes. Let cool.
2) In medium bowl, whisk flour with baking soda, cinnamon and salt. In another bowl, combine sugar, eggs and oil and beat at high speed until light colored and creamy. Add mashed bananas and vanilla and beat until smooth. Stir in dry ingredients until thoroughly blended. Fold in nuts.
3) Pour batter into prepared pan and bake in the middle of the oven for 50-60 minutes or until top is springy and a toothpick inserted in the center comes out clean. Let loaf cool in pan for 10 minutes before turning onto a rack to cool completely. ENJOY!!
