Directions:Preheat oven to 350º. Butter and dust with flour a 9 inch cake pan with removable rim. In a bowl, combine 1 cup granulated sugar and 1/2 cup butter. Slowly beat with a mixer to blend, then beat on high speed until well mixed, about 3 min. Add 1 cup flour, baking powder, and eggs. Stir to combine, then beat on high speed until the stiff batter is well blended, about 2 min. Scrape batter into cake pan and spread top smooth. Scatter berries evenly over batter. Sprinkle fruit with 1 tbs. granulated sugar. Bake on the center rack of oven just until cake begins to pull from pan rim, 55-60 minutes. Let cool at least 10 min. or if making ahead, wrap cake airtight when cool and let stand at room temperature up to 1 day. Remove pan rim and dust cake with powdered sugar. |

Notes: This is a very basic cake recipe that you can do a number of different things with. Use any juicy berry (except strawberries) or use pitted cherries. Or cover the surface of the batter with a layer of sliced fruit - plum, apricot, nectarine, peach, apple or pear. You can flavor the batter with vanilla, orange or lemon peel, or a spice. Or bake the cake plain and finish it with fruit and whipped cream or ice cream. This is so easy to make because you usually have the basic ingredients on hand. All you need is the fresh fruit.
