8 oz Smoke House Market Magic Marinade
2 oz Smoke House Market Secret Seasonings

3 – 3 ½ Lbs tenderloin uncooked will weigh 2 ½ - 3 Lbs after grilling
3 Lbs = 48 Oz of grilled tenderloin

Remember it’s just as easy to grill a little extra for those great sandwiches the next day.

We completely trim the tenders and marinate them for you in our world-class marinade, it will come to you in a food grade plastic bag. Refrigerate until 2 hours before serving time. Bring tenderloin out and set on counter for 1-½ hours to reach room temperature. Meanwhile prepare your grill and let the coals get white ash on them.

Remove the tenderloin from the marinade. Hand rub the Smoke House Secret Seasonings completely over the tenderloin pressing in the herbs and spices into the meat.

Grill over hot coals turning it in quarter turns every 5 minutes until meat on the ends reach 120 degrees and the meat in the center reaches 110 degrees. Use a meat thermometer for best results.
Timing of course depends on your fires heat. Remove meat from grill when you attain this temperature. Wrap in aluminum foil loosely and let stand at room temperature for 10 - 15 minutes. This allows meat to relax and the juices to flow. The temperature of the tenderloin will also increase 10 - 15 degrees while it is resting so make sure you don’t over cook it before you remove it from the grill.

After resting for 10 - 15 minutes the tenderloin is ready to carve and enjoy. For those that like it medium to medium well carve off the end of the tenderloin. For those who like it medium rare to rare carve from the center of the meat. Enjoy with our famous horseradish sauce.

Personal Notes:
Forgive the plug for the Smoke House, however, this is a handy
time table to have , regardless, of where you purchase your
tenderloin! Have fun.
