1 Large Eggplant
3 Yellow Squash
3 Zucchini
5 Carrots
2 Red Onions
3 Red Bell Peppers
1 Green Bell Peppers


Dressing for Grilling
¼ C Honey
1 C Balsamic Vinegar
½ c Olive Oil
½ c Vegetable Oil
1 Tbsp Salt
1 Tbsp Minced Rosemary
Combine all ingredients until emulsified.

Cut vegetables in to 1/2 slices but not too thin or too thick. Grill until nice grill marks are on both sides of the vegetables. Cool the vegetables after grilling. Add the Balsamic dressing and toss.
