1 ¾ C all purpose flour
1 ¾ C honey almond granola (without raisins)
¾ C granulated sugar
2 tsp. baking powder
2 tsp. cinnamon
½ tsp. salt
¼ tsp. nutmeg
2 eggs
¾ C of 2% milk
1/3 C sunflower or canola oil
1 tsp. vanilla
2 C chopped rhubarb (1” pieces)

Directions:
Directions:
1. In medium bowl, mix together flour, 1 ¼ C of the granola, sugar, baking powder, cinnamon, salt and nutmeg, breaking up any lumps in granola.
2. In large bowl, beat eggs; whisk in milk, oil and vanilla; stir in dry ingredients until almost combined.
3. Stir in rhubarb.
4. Spoon into well greased large muffin tins.
5. Sprinkle remaining ½ C granola over batter; press lightly on top.
6. Bake in 375 oven for 15 to 18 minutes or until tester comes out clean.

Makes 12 muffins - 313 calories each
