1 package frozen spinach
1/2 lb. lowfat cream cheese
1 lb. small curd cottage cheese
1/2 c. matzah meal, or very fine bread crumbs
3 large eggs, well beaten
Salt & Pepper to taste

Directions:
Directions:
1. Preheat oven to 350º. Spray a 1-quart baking dish with cooking spray.
2. Place frozen spinach in microwave and cook on high for 5 minutes. When done, drain thoroughly by placing in a strainer and pressing out all water.
3. Melt the cream cheese in a stainless steel bowl over boiling water.
4. Add spinach to cream cheese and mix well.
5. Mix in cottage cheese and matzah meal.
6. Stir in eggs, and salt and pepper.
7. Pour into baking dish, and bake 40 minutes, or until light golden on top.

From Judith Nathan's Jewish Holiday Kitchen. This dish is recommended for Passover, since it is made with matzah meal, but I usually make it to break the fast at Yom Kippur. I also make it all year round, not only for brunch, but dinner as well. It is so easy and delicious.
