1 Package of Polish Kielbasa Sausages
2 tsps. of oregano
1 sprig of time
black pepper and salt to taste
5 large tomatoes
2 scotch bonnet peppers
2 tsp. chilli powder
1 onion
3 pegs of garlic (chopped)
1/4 cup white vinegar

Directions:
©Wash sausages and season with oregano and thyme. Cut onion in small pieces and add to heated pan with oil. Saute onions and chopped garlic, after 2 minutes, add sausages and brown lightly.

Make tomato sauce:

Cut tomatoes in small pieces and place in a blender. Add tiny pieces of scotch bonnet pepper, chilli powder, black pepper and salt. Add vinegar and blend.

Once sausages are lightly browned. Add tomato sauce, cover pot and simmer. When sausages appear to be tender, turn stove off. Serve with angel hair pasta.
