1 lb. of lean lamb (boneless)
5 tbsp. of curry powder
1 onion
1 scallion stalk
1 tomato
4 pegs of garlic
2 sprigs of thyme
3 tsps. of salt
5 potatoes
1 can of green peas (fresh peas)
1 Scotch bonnet pepper
Black pepper to taste
1 Bag of pita bread
toothpicks
parsley for decoration

©Wash and cut lamb into small pieces. Season with ingredients. Heat a frying pan on a medium flame with olive oil, then add seasoned lamb. Allow to brown for approximately 20 minutes, turning occasionally. Cut potatoes in small pieces. Once lamb is properly cooked, add small quantities of additional seasoning and a 1/2 cup of warm water, place small pieces of potatoes and green peas in pan. Cover pot and let simmer for 35 minutes. Tasting occasionally for flavor. Add salt and pepper as needed.

Once lamb, potatoes and peas are cooked. Heat pita bred for 30 seconds in microwave. Place lamb, potatoes and green peas in a pita bread and close with a toothpick, decorate with parsley.
