6 Chicken Drumsticks
1 tsp. of annato seeds
1/4 of excellent Spanish Olive Oil
1 tbsp. cumin
1 tbsp. coriander
1 tbsp. smokey Spanish paprika
1 tbsp. chili chipotle
A pinch of kosher salt anf fresh
cracked pepper
1 tbspn of excellent balsamic vinegar
1 tbsp. of pure clear honey
1 lime

Place olive oil in a small saute pan on low heat. When the oil comes to a sizzle, add your annatto seeds. Swirl the saute pan for about 3-4 minutes until oil turns golden, reddidh in color. Remove the seeds and place the oil in a squirt bottle.

Rinse and pat chicken drumsticks dry. Place them in a ziploc bag. Add ingredients. Seal the bag tightly and blend thoroughly, moving the chicken and mixture in the sealed bag. Marinate overnight.

Chicken can be baked or grilled. Grilling is preferred because the charness gives the chicken a special flavor. Sprinkle with lime juice.
