1 (350g) box of instant couscous
1 small sweet onion, finely diced
¾ cup sweetened dried cranberries
½ cup dried figs, finely diced
½ cup dried apricots, finely diced
½ cup zucchini, finely diced
1 tsp fragrantly spiced curry powder
¼ tsp cinnamon
¾ cup seed mix (sunflower seeds, pumpkin seeds, pine nuts)
Toast the pumpkin and sunflower seeds on a frying pan on medium heat and brown until lightly golden.
3 to 4 scallions, trimmed and thinly sliced on an angle
2 tablespoons chopped fresh parsley leaves

Wild Berry Dressing:
1/3 cup extra-virgin olive oil
1 cup blackcurrant juice (any pure berry juice or blend may be used)
4 tablespoons fresh lemon juice
Rind of half a lemon, finely grated
1 tbsp honey
2 tsp grainy Dijon mustard
½ tsp allspice

Directions:
Prepare the couscous as per the package directions (Boil 500ml of water, pour the couscous, mix and turn off the heat. Wait about 3 minutes and fluff up the couscous with a fork).
Fry onion until translucent and slightly browned. Add zucchini and cook through until soft, then add dried cranberries, dried apricots and dried figs. Season with curry and cinnamon. Stir in the onion dried fruit mixture with the couscous. Add seeds, parsley and scallions.
Dress the salad with the wild berry dressing. Check the seasoning just before you serve the salad.
Serve warm or cold!

I know this recipe looks a little complicated with a lot of ingredients, but its actually easy to make. Also, most of the unusual ingredients can be kept in your kitchen for a long time so having them on hand makes this salad a quick go-to dish. People are always impressed with it at any potluck!
