Dough:
250g margarine or butter
3 cups flour
1 tsp baking soda
1 tsp lemon extract
300g sour cream
Cover baking soda with lemon extract, mix until fizz. Place together with flour and softened margarine or butter, cut up into smaller chunks. Mix well, add sour cream and mix well again.
Roll the dough into one big ball, and cut into two parts: 2/3 and 1/3 of the total size. Cover and place into the fridge or freezer for 20-30 minutes.
Lemon filling:
2 lemons
1.5 – 2 cups of sugar
Pour boiling water onto the whole lemons to take away bitterness. Then grade the lemons together with the peel. Mix well with the sugar.

Spread flour unto the bottom of the tray. Take the dough and roll the 2/3 sized ball about an inch larger then the bottom of the cookie sheet. Place on the sheet and spread the lemon filling on top of the dough. Roll the 1/3 sized dough ball about the size of the cookie sheet. Place on top of the filling. Merge the top and the bottom dough layers well. Do not leave any holes because exposed filling will burn the sugar and turn black.
Place in the oven and bake at 200ºC until done. When cooled, cut the pie into diamond shapes.
