1 cup all-purpose flour
2 tbsp of sugar
¼ tsp salt
8 tbsp (1 stick, ¼ lb, 114 g) of cold unsalted butter, cut up into small cubes
2 tbsp cold water

Mix the flour, sugar and salt to combine. Add butter and water and mince dough with hands until uniform.
Shape the dough into a disc, wrap in plastic and refrigerate for an hour. Meanwhile preheat to 450°F (232°C) and prepare the filling.
Filling:
1½ lbs Barlet or Bosc Pears (three or four large)
1 tsp freshly grated ginger, or to taste
Peel, core and cut pears into 8th. Cut each wedge into 3 chunks. Toss with grated ginger.
Toping:
¼ cup flour
¼ cup sugar
½ tsp salt
¼ tsp cinnamon
1/8 tsp allspice
4 tbsp butter, diced

Directions:
Directions:
Combine flour, sugar, sat, cinnamon and allspice in a bowl. Add diced butter and mix until mixture is crumbly.
Remove pastry from the refrigerator, and roll out into 11” circle on a well floured baking pan. Place filling over the dough leaving 1½’’ border. Sprinkle toping over the pears. Gently fold the border over the pears to partially enclose the filling. Bake 30 minutes until the crust is golden and the pears are tender.
Allow to cool for 5 minutes.

*TIP: Serve while hot with an icecream dollop!
