1 cup brown sugar
¼ cup butter or margarine
2 eggs, well beaten
3 bananas
1.5 cup flour
1.5 tsp baking soda
½ tsp salt

2 cups frozen blueberries (optional)
1 cup walnuts (optional)
1 tbsp flax seeds (optional)
Semi-sweet mini chocolate chips (optional)

Directions:
Directions:
Mix flour, baking soda and salt. In a separate bowl, cream sugar, eggs, butter and crushed bananas. Add the flour mixture and mix well. Add blueberries, walnuts and flax seeds.

Pour the batter into muffin pans, and sprinkle chocolate chips on top (½ tsp per muffin). Bake at 350ºF for half an hour or until done.

* TIP: You can also make banana bread by placing the batter into a casserole dish and baking for a bit longer.
