Directions:- In a mixing bowl, combine the cream cheese, feta, egg, and mint. Mix well (using your hands works best). This is the filling. - Remove the fillo dough from the package so that all the dough is in one rectangular stack. - Lay the fillo dough horizontally (landscape style). Using a knife or pizza cutter, cut the fillo dough into strips about 3 in. wide. - Once all the strips of fillo dough have been cut, it's time to make the triangle shaped puffs. Take 3 or 4 sheets (depending on how thick you want the crust) and stack them in front of you vertically. - Brush the melted butter onto the stack of fillo dough. Take a teaspoon of the cheese filling and place it on the fillo dough closest to you (do not place the filling too close to the edge because it will spill out when you fold it). - Begin folding the triangle by taking the bottom left hand corner of the fillo dough, fold it across covering the filling, and matching it to the right side of the fillo dough. Then take the bottom right side (now pointy), and fold directly up. You should see the triangle shape beginning to form. Continue in this way, folding the triangle over and over until the whole strip of fillo dough has been used (you're working bottom to top). - Once all the triangles have been made, brush them with melted butter to create a crispy flaky crust. - Bake on a baking sheet at 350º for approximately 20 mintues or until golden and flaky. Let them cool and enjoy! Note: Tiropites can be frozen before cooking and then cooked at a later time. |

Notes: This classic Greek dish can be served as an appetizer in the form of triangle-shaped puffs or it can be served as a main course if made in a sheet pan and cut into squares. The filling is very easy to make but folding the puffed pastry does require some patience and time. It's well worth it though...it's buttery, flaky, delicious, and always a big hit with kids and adults!
