1 lb hamburger

1 med onion chopped ~ 1 cup

2 cans chicken broth 14 oz size

1 can Mexican style diced tomatoes 14.5 oz size

2 cups frozen mixed vegetables

1 big russet potato ~ 1/2 lb size, peeled, 1/2 in cubes

1 lb box Mild Mexican Velveeta cut in 1 inch cubes

Directions:

In 4-6 qt saucepot, fry up the hamburger & onions, then drain fat.
Stir in broth & undrained tomatoes & cook 5-6 mins..
Stir in frozen vege's and potatoes, heat to boiling then reduce to medium, cook till potatoes are tender, about 10 mins.
In small batches, add the cheese cubes. Heat another 5 mins or so till hot then eat.
