1/3 cup pineapple juice
1/4 cup white wine or tarragon vinegar
1/2 tsp salt
1/2 tsp sugar
fresh ground pepper to taste
1 cup of wild&white rice blend (Uncle Ben's w/o the Seasoning)
1 TB butter
3 cups cooked chicken, chopped or cubed
1/4 cup minced fresh tarragon (or 2 tsp dry tarragon)
1/2 cup minced scallions
1/2 cup finely diced celery
1/2 cup slivered almonds, toasted

Directions:
Directions:
Make a vinaigrette by combining the pineapple juice, vinegar, sugar, salt, and pepper in a small bowl. Slowly whisk in the oil to emulsify the dressing. Set aside.
Cook the rice in a small saucepan with 1 and 1/2 cups water, the salt and butter. Bring to a boil and then lower the heat, cover and simmer for about 15 minutes or until all of the water has been absorbed. If the liquid has evaporated but the rice is still hard, let it sit, covered, for another 10 minutes. Cool completely.
Combine the cooled rice, chicken, tarragon, pineapple, scallions and celery in a serving bowl. Add half of the vinaigrette and toss; add more dressing as required. Refrigerate the salad for several hours before serving to allow the flavors to develop. Garnish with the almonds before serving.

This is a great dish to use with leftover turkey or chicken. Ham also tastes great with these ingredients. I almost put this in the salad category, but I typically use it as a luncheon entree. I will let the Editor decide where to print it!
