1 cup rice
1 qt. milk
1/2 cup sugar
1 1/2 tsp. vanilla
Cinnamon and nutmeg
1/2 cup raisins (optional)

Directions:
Directions:
Mix first four ingredients in a 1 1/2 qt. baking dish. Raisins may be stirred in as well as 1/8 tsp. nutmeg. Sprinkle cinnamon on top. Bake at 325º for 1 1/4 hrs. or until rice is tender. The pudding must be stirred often while baking to keep it creamy and to keep the milk from forming "skin" on the top. If it seems too thick, more milk can be added.

The Evans girls grew up on a dairy farm and milk was plentiful so rice pudding was served often as it provided an inexpensive dessert. It was a favorite of Grandpop Evans.
